Chef K Kale Caesar Salad

Kardashian private Chef, Chef K kale caesar recipe 


• Crispy Chickpeas: Preheat the oven to 425°F and line a large baking sheet with parchment paper.Spread 1 and 1/2 cup of drained and washed chickpeas on a sheet tray pat them dry with paper towels. 
Transfer the dried chickpeas to the baking sheet and toss them with a drizzle of olive oil, paprika and salt. Bake for 25-30 mins until golden brown and crispy. Allow to cook for another 10 mins if you prefer it crispier. 


• Kale Prep: 1-2 bunches of kale.Wash the kale and tear it from the stems. Chop into small pieces. Place the kale in a large bowl with ice water for 10 mins. Strain and dry well with paper towels or a salad spinner.
• Caesar Dressing: 2 cloves minced garlic, 1-2 anchovies, 1 tsp Worcestershire sauce, 1/4 grated parm, 3 tbsp lemon juice, 2 egg yolks, 1 tsp Dijon mustard, 1/2 cup avocado oil or neutral oil, 1/2tsp salt and 1/2 tsp black pepper.
• Add about 1/4 cup of the dressing to the kale to start and toss really well u til all the leaves are coated. Shred some fresh Parmesan or Pecorino Romano.
• Drizzle the kale with more dressing, and toss in the cooled crispy chickpeas. Serve and Devour
